My personal favorite is vegetable lo-mien. I love to add brown rice noodles, and sometimes, mushrooms are my protein these days. I will also have chicken or crispy tofu.
But it doesn’t have to stop there; you can even make it into a bowl, and add brown rice or quinoa. These are just some ideas to get your creative wheels turning because I know we all have those heart-bearing favorites.

Vegetable Stir Fry Recipe
Ingredients
- 4 mushrooms
- 1 small onion
- 4 mini sweet bell peppers
- 1 1/2 cup broccoli
- 1/4 cup shredded carrots
- 1-2 garlic cloves
- 1/4 cup liquid aminos
- 1 tbsp coconut oil
Instructions
- Begin by chopping all the ingredients.
- Heat coconut oil in pan on medium heat. Then add the chopped onions, garlic, and carrots. Sauté these for a few minutes until they begin to soften.
- Next, mix in the rest of the vegetables and continue cooking for another 5 to 10 minutes.
- Pour in the liquid aminos, reduce the heat to a gentle simmer, and cover the pan. Let the mixture simmer for about ten minutes or until the vegetables are tender.
