This sheet pan is probably a classic more traditional sheet pan. That doesn’t mean it tastes any less. I love this one. It’s a favorite of mine. I love how it is so simple and pairs perfectly with many different foods.
I truly enjoy having a good sheet pan. Not only are they so easy to put together but the convenience of having them on hand makes it such a go-to for me.
Sheet pans are perfect for creating dishes whether that’s for breakfast, lunch, or dinner. It feels like a hearty meal but without the heaviness. This dish pairs beautifully with many dressings.
You can turn it into an easy salad or pair it with your favorite protein. No matter which way you choose to have it, it’s a healthy and very filling dish I just know you will enjoy.

These recipes are to give you a place to start. When we are switching and changing habits we don’t always fully know what that may look like for us.
During this trial and error phase, you are exploring and finding what works for you. And what I share with you here is in no way the exact picture of what healthy looks like. But this is what it looks like for me and where I am.
I’m always growing and continue to add more positives to every meal and snack. I want to encourage you to do the same.

Want More Flavor?
Create more flavor by adding a sprinkle of smoked paprika and onion powder to your seasonings.
Helpful tips:
Chopping veggies and potatoes: I prefer a cut that’s more chunky while still small.
I would also recommend keeping your cut potatoes the same size as this helps everything to cook all at once.
Don’t have coconut oil? Use olive oil or ghee; these can be great options.
Not sure if potatoes are done? Fork it. If the potatoes are tender enough the fork will pierce through easily. If not then add another 10-15mins.
Simple Sheet Pan Recipe
About five servings.
Ingredients
4 medium potatoes
half green bell pepper
half red bell pepper
1 red onion
1/2 – 1 tbsp coconut oil
Sprinkle garlic powder
Sea salt & pepper to taste
Directions
First, preheat the oven and cut up your vegetables. Next, add your chopped veggies to a bowl or directly to the pan. Add your seasonings, and oil and mix well. Then place your pan into the oven and cook until tender.
Baking Instructions: Bake at 350 degrees for 40 mins or until tender.
Air fryer Instructions: Air fry at 375 degrees for 15-20 mins or until tender.
