You can simply layer this stir fry with your preferred protein and whole grain to not only keep you full but satisfied.
My personal favorite is vegetable lo-mein. I love to add brown rice noodles, and sometimes mushrooms are my protein these days. 🙂 I will also have chicken or crispy tofu.
But it doesn’t have to stop there; you can even make it into a bowl, and add brown rice or quinoa. These are just some ideas to get your creative wheels turning because I know we all have those heart-bearing favorites.

Vegetable Stir Fry Recipe
Four to five servings.
Ingredients
5-6 Mushrooms
One whole onion
4-5 Mini bell peppers
1/2 cup Baby carrots
1 and half cup Broccoli (blanched)
2 Garlic cloves
1/4 cup Liquid amnio’s
1 tbsp Coconut oil
Stovetop Directions:
First, chop all ingredients. (If your broccoli is not blanched and you prefer it this way then see instructions below.)
Next add coconut oil to a pan sauté onions, garlic, and chopped carrots to cook for a few minutes. Then add your remaining vegetables and cook for another minute or two. Now add your liquid aminos, lower the heat, and cover. Allow this mixture to simmer for ten minutes or until tender.
Blanching Instructions: Add water to a pan and bring to a boil. Once boiling add chopped broccoli for five minutes. For less crisper broccoli: drain and allow to cool. For crisper broccoli add to ice water bath to cool then drain.
